Weekly Menu Recap: What I Made for Dinner This Week

I have three recipes to share this week! We had burgers one night and leftover minestrone soup (which is so good) from last week. You can find the recipe for that and last week’s meals here.

Slow Cooker Honey Lime Chicken

This is one of my go to recipes! You can use this chicken to make tacos, quesadillas or burrito bowls. So many options! There is also a recipe for honey lime chicken enchiladas on this blog using similar ingredients that I highly recommend!

Coconut Chicken Strips

These are one of my kid’s favorites! The recipe calls for baking them, but I fry them in coconut oil in a skillet to give them extra flavor! We usually have sweet potato fries with them to make for an easy meal!

The Pioneer Woman’s Meatballs

These meatballs are the definition of comfort food! They are easy and delicious!
