Weekly Menu Recap: What I Made For Dinner
I am going to start sharing a weekly menu recap at the end of each week instead of sharing my monthly menus like I have been. I hope this helps you with ideas for planning your own meals. I typically plan my meals for Monday through Friday and then have leftovers, or order pizza/take out on the weekends.
Beer Can Chicken with Honey Cinnamon Roasted Sweet Potatoes
These are two of our family’s favorites. We cook the chicken on our Traeger grill, but this can also be made in the oven. The chicken is flavorful and for lack of better words, moist. I usually buy a large chicken, so I have leftovers to use in a another recipe later in the week. The sweet potatoes are tossed in butter, honey and cinnamon. How could they not be good, right? My kids love them! We usually have green beans or lettuce salads with this meal as well.
This is one of my personal favorite meals! The flavor of the homemade seasoning is delicious and cooking it on one sheet pan makes for easy clean up!
Each time I make lasagna I either try a new recipe or make changes to it, but I honestly don’t think you can mess up lasagna! This is the recipe I used when I made it this week. I did add in some traditional prego sauce instead of using all crushed tomatoes like the recipe calls for. I also used some italian blend cheese instead of all mozzarella.
Chicken Noodle Soup With Dumplings
I shared my recipe for this in my soup round up post this fall. The dumpling recipe is my grandma’s, and I never make this soup without them. If you try them you will know why! I also used frozen egg noodles this week which I highly recommend!
5. Salisbury Steak with Air Fryer Homemade Fries
This Salisbury steak recipe is my mother in laws. My kids don’t even notice the peppers and onions because they are chopped finely. They loved them! The homemade fries are so delicious and get nice and crispy! I also add a steamed veggie as a side to this meal.
