Recipe Roundup: My Four Favorite Fall Soups

When the weather starts to cool down one of the first things I crave is a bowl of chili. As soon as September hits soup becomes part of my weekly meal rotation. A warm bowl of soup on a cool day is the definition of comfort food. Meal prep for most soups is quick and easy. I love that one batch of soup can feed our family for two meals, so most weeks through fall and winter we eat soup two nights a week. I am going to share my four favorite soup recipes that my family loves.

1.Chili

1 lb. ground beef, browned (seasoned with chili powder, garlic powder, salt & peper)

1/2 of one green pepper, diced

1 can kidney beans

1 can black beans

2 cans chili beans

1 14 oz can diced tomatoes

2 cans stewed tomatoes

1 jar of your favorite salsa

1/2-1 cup brown sugar

2-3 tablespoons chili powder

Combine all ingredients in slow cooker. Cook on low for 4-6 hours. Serve topped with corn chips, sour cream, and shredded cheese.

We love to eat our chili with cornbread muffins topped with honey butter. I will share the recipe for those also!

Cornbread Muffins

1 cup cornmeal

3 cups flour

1 1/3 cups sugar

2 tablespoons baking powder

1 teaspoon salt

2/3 cup olive oil

4 eggs

2 1/2 cups milk

6 tablespoons butter, melted

Bake at 350 for 15 minutes. Serve warm with honey butter. Makes 30 muffins.

Another one of our favorites is chicken tortilla soup! I first tried this kind of soup at Granite City and loved it. The original recipe did not have a creamy base, so I revamped it a little to be more like the Granite City soup I loved! I think it tastes very similar. I love how easy this soup and is, and besides the chicken, everything is cooked in one pot.

2. Chicken Tortilla Soup

4 tablespoons butter

4 tablespoons flour

6 cups chicken stock

1 can V8 juice

1 jar salsa

1 can black beans

1 bag frozen corn

3 cups cooked, shredded chicken breasts

2 cups shredded cheddar cheese

1/2 cup heavy whipping cream

Melt butter in large pot, add in flour to make a roux. Slowly whisk in chicken stock and V8 juice. Simmer on medium heat until slightly thickened. Add in black beans, corn, salsa and chicken. Add cheese and stir to melt. Stir in cream and heat through. Serve with any or all of these toppings: tortilla chips, sour cream, cheddar cheese, cilantro, avocado. We love to have corn bread muffins on the side with this soup as well!

3.Lasagna Soup

My next favorite is lasagna soup! I love lasagna, but hate the process of making it. This one pot soup is so easy and I honestly like it better than regular lasagna. The recipe comes from Carlsbad Cravings blog. Funny story; one day my sister and I were talking about recipes and I was telling her about Carlsbad Cravings blog that I had found. I said her husband’s name must be Carl or something. My sister thought it was hilarious and said actually Carlsbad is a city in California! I had no idea, but now I know! Haha!! Anyways, she has so many great recipes on her blog, but this is definitely my favorite! Find the link here! Topping it with ricotta cheese is a must and we love ours with toasted french bread!

4. Chicken Noodle Soup with Dumplings

I love classic chicken noodle, and dumplings take it to a whole other level of deliciousness! Honestly I critique the recipe a little bit each time I make it, but this is the basic recipe I use! In my opinion the dumplings are what takes chicken noodle soup from good to great! The recipe I use is my grandma’s, and it is so good! My grandma was the best cook and her soup with dumplings was one of my favorite things she made! Here is the recipe:

Dumplings

1/2 cup milk

1 beaten egg

1/4 teaspoon salt

1 teaspoon cream

Flour–enough so batter is thick and stiff enough to cut with a spoon

Drop dumplings in boiling soup. They will float to the top when done.
