Easy & Delicious Microwave Caramel Popcorn

This caramel popcorn is the perfect quick and easy snack for movie night or for a holiday gathering. My mother in law has been making this popcorn for years and it so delicious! I love that it takes minimal time and ingredients. My first attempt at making this was a complete fail! I burned my finger on the caramel and burned the popcorn in the bag. It turned into a solid black chunk! I’m not sure what went wrong but today I opted to cook it in a bowl instead of a brown paper bag and it turned out perfectly! This recipe turns out perfectly crunchy and is not at all sticky!

You can use any type of popcorn for this recipe. We love to pop our popcorn in coconut oil in our Stir Crazy.

Caramel Popcorn

16 cups popped popcorn, or 1/2 cup kernels

1 cup brown sugar

1/4 cup corn syrup

1/2 cup butter

1/2 teaspoon salt

1 teaspoon vanilla

1/2 teaspoon baking soda

Pop the popcorn and pour into large microwavable bowl, or brown paper bag.

Melt butter, brown sugar, corn syrup, and salt in microwave for 3 minutes. Stir after each minute.

Add vanilla and baking soda to caramel mixture and stir well.

Pour over popcorn and stir.

Put the bag or bowl in microwave for 3 minutes. Take out the bag or bowl and shake/stir after each minute. After the 3 minutes return to the microwave for an additional 1 minute and 30 seconds, stirring every 30 seconds.

Pour onto wax paper and let cool! Add additional toppings, or enjoy as is!

Melted white chocolate chips

Melted chocolate chips

Toasted nuts(almonds, pecans)

Peanuts

I split the popcorn in half and added almonds to one half and m&m’s and melted white chocolate to the rest! In the unlikely case that you have leftovers, you can store it in an airtight container for one week.
